Cheesy Spinach and Red Pepper Frittata

6 large eggs

1 cup fresh spinach, chopped

1/2 cup red bell pepper, diced

1/2 medium onion, finely chopped

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté the Veggies: In a large oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and red bell pepper, and sauté for about 3-4 minutes until they are soft and fragrant.

      Add Spinach: Add the chopped spinach to the skillet and cook for an additional 2 minutes, just until wilted. Remove from heat.

        Whisk the Eggs: In a large bowl, whisk together the eggs, garlic powder, salt, and black pepper. Then, stir in the mozzarella and Parmesan cheeses until well combined.

          Combine Everything: Pour the egg mixture over the sautéed vegetables in the skillet, making sure it's evenly distributed. Gently stir to combine.
