Ingredients

24 jumbo pasta shells

1 ½ cups ricotta cheese

1 ½ cups fresh spinach, chopped

1 cup mozzarella cheese, shredded (plus extra for topping)

½ cup grated Parmesan cheese

1 egg, beaten

2 cloves garlic, minced

1 teaspoon Italian seasoning

½ teaspoon salt

¼ teaspoon black pepper

2 cups marinara sauce

Fresh basil leaves, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Pasta: In a large pot of boiling salted water, cook the jumbo shells for about 8-10 minutes, until al dente. Drain and set aside to cool slightly.

Prepare the Filling: In a large mixing bowl, combine the ricotta cheese, chopped spinach, mozzarella cheese, Parmesan cheese, beaten egg, minced garlic, Italian seasoning, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Stuff the Shells: Using a spoon, fill each cooked pasta shell with about 2 tablespoons of the ricotta and spinach mixture. Place the stuffed shells in a greased 9x13-inch baking dish.

Add the Sauce: Pour the marinara sauce evenly over the stuffed shells, making sure they are well covered. Sprinkle some extra mozzarella cheese on top for added cheesiness.

Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and lightly golden.

Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves if desired. Serve warm and enjoy your cheesy delight!
