2 cups mushrooms (button or cremini), sliced

1 medium onion, thinly sliced

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried thyme

Salt and pepper to taste

4 large flour tortillas

2 cups shredded cheese (mix of mozzarella and cheddar)

1/2 cup fresh spinach (optional)

Fresh cilantro or parsley for garnish

Sour cream or guacamole for serving

Instructions
 

Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the sliced onions and sauté for about 3 minutes until they start to soften. Then, add the sliced mushrooms, garlic powder, dried thyme, salt, and pepper. Cook for an additional 7-10 minutes, stirring occasionally, until the mushrooms are golden brown and the onions are caramelized. If using spinach, add it in the last minute of cooking until just wilted.

    Prepare Quesadilla Filling: Once the mixture is cooked, remove it from the heat and let it cool slightly. In a bowl, combine the sautéed mushrooms and onions with most of the shredded cheese, reserving a small amount to sprinkle on the top later.

      Assemble Quesadillas: In a clean skillet (or the same skillet if preferred), lay one tortilla flat on the surface. Evenly spread a portion of the mushroom and cheese mixture onto one half of the tortilla. Fold the other half over the filling.

        Cook Quesadillas: Cook the folded quesadilla in the skillet over medium heat for about 2-3 minutes on each side, or until the tortilla is golden and crispy, and the cheese is fully melted. Remove from the skillet and keep warm in a low oven while you repeat with the remaining tortillas.
