1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 can (14.5 oz) diced tomatoes (with juices)

4 cups chicken or vegetable broth

1 cup heavy cream

2 cups fresh cheese tortellini (store-bought or homemade)

1 cup fresh spinach, chopped

1 tsp dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

½ cup grated Parmesan cheese

2 tbsp olive oil

Fresh basil leaves for garnish (optional)

Brown the Sausage: In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add the Italian sausage, breaking it apart with a spoon. Cook until browned and no longer pink, about 5-7 minutes. Once browned, remove excess fat if necessary.

    Sauté the Vegetables: Add the diced onion, carrots, and celery to the pot. Cook for about 4-5 minutes until the vegetables are softened. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
