4 large russet potatoes

2 tablespoons vegetable oil

Salt and pepper, to taste

1 cup shredded cheddar cheese

1 cup chili (canned or homemade)

½ cup sour cream

¼ cup diced green onions

½ cup pickled jalapeños (optional)

Fresh cilantro for garnish (optional)

Instructions
 

Prep the Potatoes: Preheat your oven to 425°F (220°C). Wash and scrub the russet potatoes thoroughly. Cut them into thin strips, about ½ inch thick, to create fries.

    Coat and Season: In a large mixing bowl, toss the potato strips with vegetable oil, salt, and pepper until evenly coated.

      Bake the Fries: Spread the seasoned potato strips in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.

        Add the Chili: While the fries are baking, prepare your chili if making from scratch, or heat the canned chili in a saucepan over medium heat.
