3 large russet potatoes

1 cup shredded sharp cheddar cheese

1 cup canned chili (meat or vegetarian, your choice)

1/2 cup sour cream

1/4 cup chopped green onions

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Olive oil for drizzling

Fresh cilantro for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: Wash the russet potatoes thoroughly and prick them all over with a fork. Rub them lightly with olive oil and sprinkle with salt. Place them directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork.

      Cool and Scoop: Once baked, remove the potatoes from the oven and let them cool for about 10 minutes. When cool enough to handle, slice each potato in half lengthwise and scoop out the insides into a mixing bowl, leaving about 1/4 inch of potato on the skin to maintain structure.

        Mix the Filling: To the potato insides, add the shredded cheddar cheese, canned chili, sour cream, garlic powder, smoked paprika, salt, and pepper. Mix until everything is well combined.

          Fill the Potato Skins: Spoon the cheesy chili filling back into the potato skins, mounding it slightly. You can drizzle a little olive oil on top to help with browning.

            Bake Again: Place the filled potato skins on a baking sheet and bake them in the oven for an additional 15-20 minutes, or until the cheese is melted and bubbly and the potatoes are crispy.

              Garnish and Serve: Remove from the oven and sprinkle with chopped green onions and fresh cilantro, if desired. Serve warm with extra sour cream on the side.
