Cheesy Broccoli Rice Casserole

2 cups cooked rice (white or brown)

2 cups fresh broccoli florets (or frozen, thawed)

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1 can (10.5 oz) cream of mushroom soup (or creamy broccoli soup)

1/2 cup milk

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt

1/4 teaspoon paprika (optional, for a bit of color)

1 cup breadcrumbs (for topping)

2 tablespoons butter (melted, for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Broccoli: If using fresh broccoli, steam the florets for about 3-4 minutes until slightly tender but still vibrant green. Drain and set aside. If using frozen, ensure they are fully thawed and drained.

      Mix the Base: In a large mixing bowl, combine the cooked rice, steamed broccoli, cream of mushroom soup, milk, garlic powder, onion powder, black pepper, salt, and paprika. Stir until everything is well incorporated.

        Add the Cheese: Fold in the shredded cheddar cheese and half of the grated Parmesan cheese into the rice mixture. This will create a creamy, cheesy base.

          Transfer to Casserole Dish: Spray a 9x13 inch casserole dish with cooking spray. Pour the rice and broccoli mixture into the dish and spread it evenly.
