Cheesy Broccoli and Chicken Casserole

2 cups cooked chicken, diced (rotisserie chicken works well)

4 cups fresh broccoli florets (or 2 cups frozen)

1 cup uncooked brown rice

2 cups chicken broth

1 cup shredded cheddar cheese

1 cup cream of mushroom soup (or make your own)

½ cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

½ cup breadcrumbs (optional, for topping)

1 tablespoon olive oil (if using fresh broccoli)

Instructions
 

Preheat Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare Broccoli: If using fresh broccoli, blanch it in boiling water for 2 minutes until vibrant green, then transfer to an ice bath to stop cooking. Drain and set aside. If using frozen, ensure it’s thawed and drained well.

      Cook Rice: In a medium saucepan, combine the uncooked brown rice and chicken broth. Bring to a boil, then reduce to a simmer, cover, and cook for about 45 minutes, or until the rice is tender and has absorbed the broth.

        Mix the Sauce: In a large mixing bowl, combine the cream of mushroom soup, milk, garlic powder, onion powder, paprika, salt, and pepper. Mix well to form a creamy sauce.

          Combine Ingredients: In a large casserole dish, combine the cooked chicken, blanched broccoli, and cooked rice. Pour the creamy sauce over the top and gently mix to ensure everything is evenly coated.

            Add Cheese: Fold in ¾ cup of the shredded cheddar cheese into the mixture for a gooey experience. Reserve the rest of the cheese for topping.

              Prepare Topping: If you desire a crunchy topping, mix the breadcrumbs with olive oil in a small bowl, then sprinkle them over the top along with the reserved cheese.

                Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. Then remove the foil and bake for an additional 15-20 minutes, or until the top is bubbly and golden.
