Cheesy Beef and Quinoa Stuffed Peppers

4 large bell peppers (any color)

1 cup quinoa, rinsed

2 cups beef broth (or water)

1 lb ground beef (or turkey)

1 small onion, diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, drained

1 cup corn (frozen or canned)

1 cup black beans, rinsed and drained

1 tsp cumin

1 tsp chili powder

Salt and pepper to taste

1 ½ cups shredded cheese (cheddar, Monterey Jack, or a blend)

¼ cup fresh cilantro, chopped (for garnish)

1 tbsp olive oil

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Quinoa: In a medium-sized pot, combine 1 cup of quinoa and 2 cups of beef broth (or water). Bring to a boil, then cover and reduce the heat to low. Simmer for about 15-20 minutes until the quinoa is cooked and the liquid is absorbed. Fluff with a fork and set aside.

      Cook the Beef: In a large skillet, heat olive oil over medium heat. Add diced onions and cook until translucent, about 4-5 minutes. Add minced garlic and sauté for another minute.

        Brown the Meat: Increase the heat to medium-high, add the ground beef, and cook until browned and cooked through, breaking it apart with a spatula, about 6-8 minutes. Drain any excess fat.

          Combine Ingredients: Stir in the cooked quinoa, diced tomatoes, corn, black beans, cumin, chili powder, and season with salt and pepper. Mix well and cook for additional 2-3 minutes until everything is heated through.

            Prepare Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Lightly season the insides with a pinch of salt.

              Stuff the Peppers: Fill each bell pepper cavity generously with the beef and quinoa mixture. Top with a handful of shredded cheese.

                Bake: Place the stuffed peppers upright in a baking dish. Cover the dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly and slightly golden.

                  Garnish & Serve: Remove from the oven, allow to cool for a few minutes, then garnish with fresh chopped cilantro before serving.
