Cheesy Beef and Broccoli Stuffed Shells

12 jumbo pasta shells

1 lb ground beef

2 cups broccoli florets (fresh or frozen)

1 cup ricotta cheese

1 cup shredded mozzarella cheese, plus extra for topping

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 tsp Italian seasoning

Salt and pepper to taste

2 cups marinara sauce (store-bought or homemade)

Fresh parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the jumbo shells according to package instructions until al dente. Drain and let them cool, so they are easier to handle.

      Prepare the Filling:

        - In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it up with a wooden spoon.

          - Add the minced garlic, salt, pepper, and Italian seasoning. Cook for an additional 1-2 minutes until fragrant.

            - If using fresh broccoli, steam or blanch until tender, then chop finely. If using frozen, thaw and chop. Mix the broccoli into the beef mixture.

              - In a large bowl, combine the cooked beef and broccoli mixture with ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, and the egg. Mix until well combined.

                Stuff the Shells: Fill each pasta shell with the beef and broccoli filling using a spoon (or a piping bag for easier filling).

                  Assemble the Dish: In a large baking dish, spread 1 cup of marinara sauce on the bottom. Arrange the stuffed shells in a single layer on top of the sauce. Pour the remaining marinara sauce over the stuffed shells, then sprinkle with additional mozzarella cheese.

                    Bake: Cover the baking dish with aluminum foil (to prevent sticking, spray the foil with cooking spray first). Bake in the preheated oven for 25 minutes, then remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                      Serve: Once baked, let cool for a few minutes. Garnish with fresh parsley if desired, and serve hot.
