Cheesy Beef and Broccoli Quinoa Casserole

1 cup quinoa, rinsed and drained

2 cups beef broth

1 lb ground beef

2 cups broccoli florets (fresh or frozen)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 small onion, diced

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon Italian seasonings

Salt and pepper, to taste

1 tablespoon olive oil

1/2 cup sour cream

1/2 cup milk

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook Quinoa: In a medium saucepan, combine the rinsed quinoa and beef broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and all the broth is absorbed. Remove from heat and set aside.

      Sauté Vegetables: In a large skillet over medium heat, heat the olive oil. Add the diced onion and minced garlic, cooking until the onion is translucent (about 3-4 minutes).

        Brown the Beef: Add the ground beef to the skillet. Season with salt, pepper, paprika, and Italian seasonings. Cook until the beef is browned, breaking it apart as it cooks (about 5-7 minutes). Drain any excess fat.

          Combine Ingredients: In a large mixing bowl, combine the cooked quinoa, sautéed beef mixture, broccoli florets, sour cream, milk, half of the cheddar cheese, and half of the mozzarella cheese. Stir until well combined.

            Transfer to Casserole Dish: Pour the mixture into a lightly greased 9x13-inch casserole dish, spreading it evenly.

              Top with Cheese: Sprinkle the remaining cheddar and mozzarella cheeses on top of the casserole.

                Bake: Cover the casserole with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.

                  Serve: Allow the casserole to cool for a few minutes before slicing. Serve warm and enjoy!
