Cheesy Beef and Broccoli Casserole

1 pound ground beef

2 cups broccoli florets (fresh or frozen)

1 cup uncooked rice (long-grain or Jasmine)

2 cups beef broth

1 cup cheddar cheese, shredded

1 cup cream of mushroom soup

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

1/2 cup mozzarella cheese, shredded (for topping)

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Cook the Beef: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant.

    Brown the Meat: Add the ground beef to the skillet. Season with onion powder, garlic powder, paprika, salt, and pepper. Cook until the beef is browned and fully cooked, breaking it apart with a spatula as it cooks. Drain any excess fat.

      Prepare the Casserole: In a large mixing bowl, combine the cooked beef mixture with the uncooked rice, broccoli florets, beef broth, and cream of mushroom soup. Stir until well mixed.

        Bake the Casserole: Transfer the mixture to a greased 9x13 inch baking dish. Cover with aluminum foil and bake in a preheated oven at 375°F (190°C) for 40 minutes.

          Add the Cheese: After 40 minutes, remove the foil and sprinkle the cheddar and mozzarella cheeses evenly over the top. Return to the oven, uncovered, and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.

            Garnish and Serve: Remove the casserole from the oven and let it cool for a few minutes. Garnish with chopped parsley before serving.
