Ingredients

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup BBQ sauce (your favorite brand or homemade)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup red onion, thinly sliced

1/2 cup corn kernels (canned or frozen)

4 large flour tortillas

1/2 cup fresh cilantro, chopped (optional)

1 avocado, sliced (optional, for serving)

Olive oil or cooking spray (for grilling)

Instructions

Mix the Chicken and BBQ Sauce: In a large bowl, combine the shredded chicken with the BBQ sauce. Mix well until the chicken is fully coated.

Prepare the Tortillas: Lay out the flour tortillas on a clean surface. Distribute the BBQ chicken mixture evenly among the tortillas, leaving about an inch of space around the edges.

Add the Cheese and Veggies: Sprinkle the shredded cheddar and mozzarella cheese over the chicken mixture. Add the red onion slices and corn kernels evenly on top. If you enjoy cilantro, add a sprinkle of it as well.

Wrap it Up: Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top. Ensure the filling is secure inside the wrap.

Grill the Wraps: Heat a grill pan or skillet over medium heat and lightly coat with olive oil or cooking spray. Place the wraps seam-side down onto the pan and grill for about 3-4 minutes on each side, or until the tortillas are golden brown and the cheese has melted.

Serve and Enjoy: Remove from the grill and cut each wrap in half. Serve with sliced avocado on the side and any additional BBQ sauce for dipping.
