3 (8 oz) packages of cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

8 oz Godiva chocolate (or any high-quality dark chocolate), melted and slightly cooled

¼ cup cocoa powder

2 tablespoons all-purpose flour

For the Ganache Topping:

1 cup heavy whipping cream

8 oz Godiva chocolate, chopped

Instructions
 

Make the Crust:

    - Preheat your oven to 325°F (160°C).

      - In a medium bowl, mix together the chocolate graham cracker crumbs, melted butter, and sugar until well combined.

        - Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake in the preheated oven for 10 minutes, then remove and allow to cool.

          Prepare the Cheesecake Batter:

            - In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.

              - Gradually add in the sugar and vanilla extract, mixing until well incorporated.

                - Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.

                  Incorporate the Chocolate:

                    - Stir in the sour cream, melted Godiva chocolate, cocoa powder, and flour until smooth. Scrape the sides of the bowl as needed to ensure everything is blended.
