Ingredients

4 slices of sourdough bread

4 large eggs

1 cup sharp cheddar cheese, shredded

1 can (15 oz) black beans, rinsed and drained

1 small can (4 oz) diced green chilies

1 ripe avocado, sliced

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Optional: Hot sauce for serving

Instructions

Prep the Toast: Preheat your oven to 400°F (200°C). Arrange the sourdough bread slices on a baking sheet and lightly brush each slice with olive oil. Bake for about 5-7 minutes, or until the bread is golden and slightly crispy.

Prepare the Egg Mixture: In a medium mixing bowl, crack the eggs and whisk together with smoked paprika, garlic powder, salt, and pepper until well combined.

Cook the Eggs: In a non-stick skillet over medium heat, add a splash of olive oil. Pour in the egg mixture and gently scramble until the eggs are just set but still soft (they will continue to cook when combined with the toast).

Add the Beans and Chilies: Fold in the black beans and diced green chilies into the scrambled eggs and cook for another minute until heated through. Remove from heat.

Assemble the Toast: Take the toasted sourdough slices from the oven. Evenly distribute the egg, bean, and chili mixture atop the toast. Top generously with shredded cheddar cheese.

Melt the Cheese: Return the loaded toast to the oven and broil on high for 2-3 minutes, or until the cheese is bubbly and slightly golden. Keep a close eye to prevent burning!

Finish with Toppings: Once out of the oven, add avocado slices on top, sprinkle with fresh cilantro, and drizzle with hot sauce if desired.

Serve & Enjoy: Serve warm as a hearty breakfast or snack. Enjoy the melty cheese combined with the spicy chili flavor for an unforgettable bite!
