4 cups fresh broccoli florets

1 cup diced onion

2 cloves garlic, minced

4 cups vegetable broth

2 cups shredded sharp cheddar cheese

1 cup heavy cream

2 medium-sized potatoes, peeled and diced

1 teaspoon dried thyme

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

¼ teaspoon paprika

Optional garnish: croutons, more cheese, or a sprinkle of fresh chives

Instructions
 

In your crockpot, place the fresh broccoli florets, diced onion, minced garlic, and diced potatoes.

    Pour in the vegetable broth, making sure all the vegetables are submerged.

      Add the dried thyme, salt, black pepper, and paprika. Stir gently to combine all ingredients.

        Cover the crockpot with its lid and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender.

          Once cooked, use an immersion blender to carefully blend the soup to your desired level of creaminess (you can leave some chunks of broccoli if you prefer a rustic texture).

            Stir in the heavy cream and shredded cheddar cheese, mixing well until the cheese is completely melted and incorporated.

              Taste and adjust seasoning if needed. If the soup is too thick, you can add a little more broth or cream to reach your desired consistency.

                Serve warm, garnished with optional croutons, extra cheese, or chopped chives for a nice touch.
