Charcuterie Fried Rice

3 cups cooked jasmine rice (preferably day-old)

1 cup assorted charcuterie meats (salami, prosciutto, and chorizo), diced

1 cup mixed cheeses (cheddar, gouda, and blue cheese), shredded

1/2 cup black olives, sliced

1/2 cup roasted red peppers, diced

1/2 cup green onions, chopped

2 large eggs, lightly beaten

3 cloves garlic, minced

3 tablespoons soy sauce

1 tablespoon olive oil

1 tablespoon butter

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Rice: Ensure the cooked jasmine rice is cold and clump-free. Day-old rice is ideal as it dries out slightly, making it perfect for frying.

    Cook the Eggs: In a large skillet or wok, heat the olive oil over medium heat. Add the beaten eggs and scramble until just set. Remove the eggs from the skillet and set aside.

      Sauté the Aromatics: In the same skillet, melt the butter and add minced garlic. Sauté for 30 seconds until fragrant, being careful not to burn it.

        Add the Charcuterie: Add the diced charcuterie meats to the skillet and cook for 2-3 minutes until they begin to crisp and render out some fat.

          Incorporate the Rice: Increase the heat to high and add the cold jasmine rice. Stir well to combine, breaking apart any clumps. Fry the rice for about 5-7 minutes until it starts to get slightly crispy.

            Mix in the Vegetables and Cheeses: Add the sliced olives, roasted red peppers, and half of the chopped green onions. Pour the soy sauce over the rice and mix thoroughly. Then, sprinkle in the shredded cheeses, allowing them to melt and mix through the rice.

              Finish with Eggs and Seasoning: Stir the scrambled eggs back into the fried rice and mix everything together. Taste and add salt and pepper as desired.

                Garnish and Serve: Remove from heat and garnish with the remaining green onions and chopped parsley. Serve hot as a hearty main dish or a flavorful side.
