3 cups cooked jasmine rice (preferably day-old)

1 cup assorted charcuterie meats (e.g., salami, prosciutto, chorizo), chopped

1/2 cup smoked gouda cheese, shredded

1/2 cup cherry tomatoes, halved

1/4 cup diced red onion

1/2 cup snap peas, trimmed and halved

3 cloves garlic, minced

2 eggs, lightly beaten

3 tablespoons soy sauce

1 tablespoon olive oil

1 tablespoon butter

2 green onions, chopped

Salt and pepper to taste

Optional: fresh herbs (like parsley or basil) for garnish

Prepare the Ingredients: If you haven't done so already, chop the charcuterie meats, halve the cherry tomatoes, and dice the red onion. Have all ingredients easily accessible for quick cooking.

    Heat the Pan: In a large skillet or wok, heat the olive oil and butter over medium-high heat.

      Sauté Aromatics: Add the diced red onion and minced garlic to the skillet. Sauté for 2-3 minutes until the onion becomes translucent and the garlic is fragrant.

        Scramble Eggs: Push the onion and garlic to one side of the skillet. Pour the beaten eggs into the other side and scramble until just set. Mix the scrambled eggs with the onion and garlic.

          Add Meats and Vegetables: Stir in the chopped charcuterie meats and snap peas. Cook for an additional 2-3 minutes until the snap peas are tender but still vibrant.

            Incorporate Rice: Add the cooked jasmine rice to the skillet, breaking up any clumps. Stir everything together until well combined.

              Season: Drizzle the soy sauce over the rice, adding salt and pepper to taste. Toss in the halved cherry tomatoes and stir gently to incorporate all ingredients for another 2-3 minutes.
