1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

1 cup mixed sweet bell peppers, sliced (red, yellow, green)

1 cup cherry tomatoes, halved

1/2 cup black olives, halved

1/2 cup cooked bacon, crumbled

1/2 cup sharp cheddar cheese, shredded

1/4 cup feta cheese, crumbled

Fresh parsley, chopped (for garnish)

Assorted crackers and bread for serving

Instructions
 

Prepare the Chicken: In a large bowl, combine the chicken pieces with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Mix until the chicken is well coated.

    Cook the Chicken: In a large skillet over medium heat, add the seasoned chicken. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set it aside.

      Sauté the Vegetables: In the same skillet, add a little more olive oil if necessary. Add the sliced bell peppers and cherry tomatoes. Sauté for about 3-4 minutes until they are tender but still vibrant.

        Combine Ingredients: Return the cooked chicken to the skillet with the veggies. Add the halved black olives and crumbled bacon. Stir everything together to combine and heat through for an additional 2-3 minutes.

          Melt the Cheese: Sprinkle the shredded cheddar cheese over the top of the chicken mix. Cover the skillet and let it cook for another 2-3 minutes, or until the cheese is melted and bubbly.
