2 medium carrots, grated

2 medium zucchinis, grated

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup all-purpose flour

1/4 cup grated Parmesan cheese (optional for a cheesy flavor)

1 large egg

1 tsp baking powder

1/2 tsp salt

1/4 tsp black pepper

1/2 tsp smoked paprika (or regular paprika)

1/4 cup fresh parsley, chopped

1/2 cup Greek yogurt (for serving)

4 large whole wheat tortillas or wraps

Olive oil (for frying)

Instructions
 

Prepare the Vegetables: Start by grating the carrots and zucchinis using a box grater or food processor. Place the grated veggies in a clean kitchen towel and squeeze out excess moisture to avoid soggy fritters.

    Mix the Batter: In a large mixing bowl, combine the grated carrots and zucchinis with the finely chopped onion and minced garlic. Add the flour, Parmesan cheese (if using), egg, baking powder, salt, black pepper, smoked paprika, and chopped parsley. Mix thoroughly until you achieve a well-combined batter.

      Heat the Pan: In a large skillet, heat about 2 tablespoons of olive oil over medium heat.

        Cook the Fritters: Once the oil is hot, scoop about 2 tablespoons of the mixture onto the skillet, flattening them into small patties. Cook for 3-4 minutes on each side or until golden brown and crispy. You may need to cook them in batches depending on the size of your skillet. Add more oil as needed between batches.

          Warm the Tortillas: While frying the fritters, warm the whole wheat tortillas in another skillet for about 30 seconds on each side, just until pliable.

            Assemble the Wraps: Once the fritters are cooked and crispy, place 2-3 fritters on each tortilla. Drizzle some Greek yogurt on top and add any additional toppings you like (such as sliced avocado, fresh spinach, or diced tomatoes).
