3 large onions, thinly sliced

4 tbsp olive oil

2 tbsp unsalted butter

3 cloves garlic, minced

1 tsp sugar

Salt and black pepper to taste

1/2 tsp red pepper flakes (or more to taste)

1/4 cup fresh parsley, chopped (for garnish)

Freshly grated Parmesan cheese (for serving)

Chilli oil (for drizzling)

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta cooking water before draining.

    Caramelize the Onions: In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium heat. Add the sliced onions and a pinch of salt. Stir occasionally, cooking slowly for about 25-30 minutes until the onions are soft, golden, and caramelized. If they start to stick, add a splash of water to deglaze the pan.

      Add Garlic and Season: Once the onions are caramelized, stir in the minced garlic and sugar. Cook for another 2-3 minutes until the garlic is fragrant. Season with salt, black pepper, and red pepper flakes to taste.
