1 sheet of puff pastry (thawed if frozen)

3 large onions (yellow or sweet), thinly sliced

2 tablespoons olive oil

2 tablespoons unsalted butter

1 tablespoon fresh thyme leaves (plus more for garnish)

1 tablespoon balsamic vinegar

Salt and pepper to taste

8 oz Brie cheese, rind removed and cut into slices

1 egg (for egg wash)

Optional: fresh arugula (for serving)

Prepare the Puff Pastry: Preheat your oven to 400°F (200°C). On a lightly floured surface, roll out the puff pastry to fit a tart pan (about a 10-inch round). Fit the pastry into the tart pan, pressing into the edges. Prick the bottom with a fork to prevent it from puffing up during baking.

    Caramelize the Onions: In a large skillet, heat the olive oil and butter over medium heat. Add the sliced onions, and season with salt and pepper. Cook the onions, stirring frequently, until they turn golden brown and caramelized (about 25-30 minutes). Add the balsamic vinegar and thyme, stirring to combine. Cook for an additional 2-3 minutes, then remove from heat.

      Assemble the Tart: Spread the caramelized onions evenly over the prepared puff pastry. Arrange the slices of Brie cheese on top of the onions.

        Egg Wash: In a small bowl, whisk the egg with a tablespoon of water. Brush the edges of the puff pastry with the egg wash to give it a nice golden color when baked.

          Bake: Place the tart in the preheated oven and bake for 25-30 minutes, or until the pastry is golden brown and the Brie is bubbly.

            Garnish and Serve: Remove from the oven and let cool slightly. If desired, sprinkle fresh thyme and serve the tart warm with a side of fresh arugula for a refreshing contrast.
