Caramelized Apple & Onion Pizza

1 pizza dough (store-bought or homemade)

2 medium-sized sweet apples (e.g., Honeycrisp or Fuji), thinly sliced

1 large yellow onion, thinly sliced

2 tablespoons olive oil

2 tablespoons unsalted butter

1 tablespoon brown sugar

Salt and freshly cracked black pepper, to taste

1 cup shredded mozzarella cheese

1/2 cup crumbled goat cheese (or feta)

2 tablespoons balsamic glaze (for drizzling)

Fresh thyme leaves (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 475°F (245°C) if using a pizza stone, or 425°F (220°C) for a baking sheet. If using a pizza stone, place it in the oven as it preheats.

    Caramelize the Onions: In a large skillet, heat 1 tablespoon of olive oil and 2 tablespoons of butter over medium heat. Add the sliced onions and sauté until they start to turn golden brown, about 10-12 minutes. Stir occasionally to prevent burning. Once caramelized, add the brown sugar, a pinch of salt, and cook for an additional 2-3 minutes until well combined. Remove from heat and set aside.

      Sauté the Apples: In the same skillet (you may need to add a touch more olive oil if it's too dry), add the sliced apples and a pinch of salt. Sauté over medium heat for about 5-7 minutes until they are slightly softened but still hold their shape. Remove from heat.

        Roll Out the Dough: On a lightly floured surface, roll out your pizza dough to your desired thickness. Transfer it to a baking sheet lined with parchment paper or a preheated pizza stone.

          Layer the Toppings: Evenly spread the caramelized onions over the pizza dough, followed by the sautéed apples. Sprinkle with shredded mozzarella cheese and then crumbled goat cheese.

            Bake the Pizza: Place the pizza in the oven and bake for 12-15 minutes, or until the crust is golden and the cheese is melted and bubbly.
