2 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon ground ginger

¼ teaspoon salt

For the Pecan Topping:

1 cup chopped pecans

½ cup caramel sauce (store-bought or homemade)

¼ cup brown sugar

2 tablespoons butter

Instructions

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium bowl, mix together the graham cracker crumbs, melted butter, granulated sugar, and salt until well combined.

        - Press the mixture evenly into the bottom of a greased 9x13 inch baking pan to form the crust.

          - Bake for 10 minutes, then remove and set aside to cool slightly.

            Make the Cheesecake Filling:

              - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

                - Gradually add the granulated sugar, mixing until well combined.

                  - Add the pumpkin puree, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until just combined and smooth.

                    Assemble the Bars:

                      - Pour the pumpkin cheesecake filling over the prepared crust and spread it evenly.

                        - Bake in the preheated oven for 25-30 minutes or until the center is set and a toothpick inserted comes out clean.

                          - Remove from the oven and let it cool at room temperature for about an hour, then refrigerate for at least 2 hours or until fully chilled.

                            Prepare the Pecan Topping:

                              - In a small saucepan over medium heat, melt the butter.

                                - Stir in the chopped pecans, caramel sauce, and brown sugar. Cook for about 3-5 minutes, stirring frequently until the pecans are coated and slightly toasted.

                                  Finish and Serve:

                                    - Once the cheesecake layer has chilled completely, spread the pecan topping evenly over the cheesecake.

                                      - Drizzle any remaining caramel sauce on top for added sweetness.

                                        - Cut into squares and serve chilled or at room temperature. Enjoy your delectable Caramel Pecan Pumpkin Cheesecake Bars!
