Ingredients

1 pint cherry tomatoes

8 ounces fresh mozzarella balls (bocconcini or ciliegine)

1 bunch fresh basil leaves

1/2 cup balsamic vinegar

4 tablespoons extra virgin olive oil

Salt and freshly ground black pepper, to taste

Optional: wooden or metal skewers (6-inch or 8-inch)

Instructions

Prepare the Balsamic Glaze: In a small saucepan, pour in the balsamic vinegar. Heat over medium heat until it begins to simmer. Reduce the heat to low and simmer for about 10-15 minutes, or until the vinegar has thickened to a syrupy consistency. Remove from heat and let it cool.

Assemble the Skewers: Take a skewer and thread on a cherry tomato, then a basil leaf, followed by a mozzarella ball. Repeat this pattern one more time (or as many times as your skewer allows) finishing with a cherry tomato for a visually appealing finish.

Season: Once you have made your desired number of skewers, lay them out on a serving platter. Drizzle the skewers lightly with extra virgin olive oil. Season them with a pinch of salt and a few cracks of black pepper for enhanced flavor.

Drizzle the Glaze: Finally, take your cooled balsamic glaze and drizzle it generously over the top of the assembled skewers. You can be creative with the drizzling pattern for an elegant touch.

Serve: These skewers are best served fresh, so enjoy them immediately or chill in the refrigerator for about 30 minutes before serving if you prefer a colder appetizer. Enjoy fantastic flavor combinations in each bite!
