1 medium butternut squash, peeled and diced into 1-inch cubes

12 oz Italian sausage (mild or spicy, based on preference), casings removed

1 lb gnocchi (store-bought or homemade)

1 cup spinach (fresh or frozen)

1/2 cup heavy cream

1 cup grated mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 tsp dried thyme

1 tsp dried oregano

1/2 tsp red pepper flakes (optional)

Olive oil

Salt and pepper, to taste

Fresh parsley (for garnish)

Preheat Your Oven: Preheat your oven to 400°F (200°C).

    Roast the Butternut Squash: On a large baking sheet, toss the diced butternut squash with 2 tablespoons of olive oil, salt, pepper, and thyme. Spread it into a single layer and roast in the oven for about 25-30 minutes or until tender and caramelized, turning halfway through for even cooking.

      Cook the Sausage: In a large skillet over medium heat, add a drizzle of olive oil and the Italian sausage. Cook, breaking it apart with a spatula, until it's browned and cooked through, about 7-10 minutes. Add the minced garlic and cook for an additional minute until fragrant.

        Combine Ingredients: When the butternut squash is done roasting, add it to the skillet with the sausage. Stir in the spinach, heavy cream, oregano, and red pepper flakes (if using). Mix well until the spinach wilts down. Taste and adjust seasoning with salt and pepper as needed.

          Add the Gnocchi: If using store-bought gnocchi, add it directly to the mixture in the skillet. If using homemade gnocchi, cook it according to the package instructions, then fold it into the skillet. Stir gently to combine all ingredients.

            Assemble the Bake: In a greased 9x13-inch baking dish, pour the gnocchi mixture and spread it evenly. Top with grated mozzarella and Parmesan cheese.
