1 lb ground turkey

1/2 cup celery, finely chopped

1/2 cup carrot, shredded

1/2 cup onion, finely chopped

3 cloves garlic, minced

1/2 cup buffalo sauce (adjust to taste)

1 tbsp olive oil

1 tsp paprika

1 tsp cumin

Salt and pepper, to taste

1 head of butter or iceberg lettuce, separated into leaves

Optional toppings: crumbled blue cheese, sliced green onions, diced tomatoes, avocado

Instructions
 

Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion, garlic, celery, and carrots. Sauté for about 4-5 minutes until the vegetables are softened and aromatic.

    Cook Turkey: Add the ground turkey to the skillet. Break it apart with a spatula and cook until it’s browned and completely cooked through, about 7-10 minutes.

      Add Seasonings: Sprinkle in the paprika, cumin, salt, and pepper. Pour in the buffalo sauce, mixing well to combine. Let the mixture simmer for an additional 3-5 minutes to allow the flavors to meld together.

        Prepare Lettuce Leaves: While the turkey is simmering, carefully rinse and separate the lettuce leaves. Pat them dry and lay them out on a platter.

          Assemble Wraps: Spoon a generous amount of the buffalo turkey mixture into the center of each lettuce leaf.
