Buffalo Chickpea Pasta Salad

8 ounces whole wheat pasta (your choice of shape, like rotini or penne)

1 can (15 ounces) chickpeas, drained and rinsed

1/2 cup celery, finely chopped

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1/2 cup shredded carrots

1/4 cup fresh parsley, chopped

1/2 cup Greek yogurt (or dairy-free alternative)

1/4 cup buffalo sauce (adjust to taste)

2 tablespoons apple cider vinegar

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Optional: crumbled blue cheese or feta for topping

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Chickpeas: In a large mixing bowl, combine the drained chickpeas, celery, red bell pepper, red onion, shredded carrots, and parsley.

      Make the Dressing: In a separate bowl, whisk together the Greek yogurt, buffalo sauce, apple cider vinegar, olive oil, garlic powder, onion powder, salt, and pepper until smooth. Adjust the buffalo sauce to your desired spice level.

        Combine Ingredients: Add the cooled pasta to the bowl with the chickpea mixture. Pour the dressing over the pasta salad and gently toss until everything is well coated.
