1 cup buttermilk (or regular milk with 1 tablespoon vinegar)

1 large egg

2 tablespoons unsalted butter, melted (plus extra for cooking)

1 teaspoon vanilla extract

Mix Dry Ingredients: In a large bowl, sift together the flour, brown sugar, granulated sugar, baking powder, baking soda, salt, and ground cinnamon. Make sure everything is well combined to prevent clumps.

    Prepare Wet Ingredients: In a separate medium bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.

      Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Gently mix until just combined; it's okay if there are a few lumps. Be careful not to overmix, as this can lead to dense pancakes.
