Breakfast Grilled Cheese

4 slices of buttery brioche bread

2 tablespoons unsalted butter, softened

4 large eggs

4 slices of cheddar cheese

2 slices of crispy bacon (or turkey bacon for a lighter option)

1 ripe avocado, sliced

Salt and pepper to taste

Fresh chives, finely chopped (for garnish)

Hot sauce (optional, for serving)

Instructions
 

Prepare the Bacon (if using): In a skillet over medium heat, cook the bacon until crispy. Once done, remove from the pan and place on paper towels to drain excess fat.

    Cook the Eggs: In the same skillet, use the leftover bacon grease (or a bit of oil) to fry the eggs sunny-side-up or to your preference. Season with a pinch of salt and pepper. Cook until the whites are set and the yolks are still runny. Set aside.

      Assemble the Sandwich: On one side of each slice of brioche bread, spread a thin layer of softened butter. On the non-buttered side of two slices, layer one slice of cheddar cheese, half of the avocado slices, one fried egg, and two slices of bacon. Top with another slice of cheddar cheese.

        Complete the Sandwich: Place the remaining two slices of bread (buttered side facing out) on top of the prepared sandwiches.

          Grill the Sandwiches: Heat a skillet over medium-low heat. Carefully place the sandwiches in the skillet and cook until the bread is golden brown and crispy, about 3-4 minutes. Flip carefully and cook the other side until golden brown and the cheese is melted, another 3-4 minutes.

            Serve: Remove from skillet and let sit for a minute before slicing. Sprinkle with fresh chives and serve with hot sauce on the side if desired.
