4 large flour tortillas

6 large eggs

1/4 cup whole milk

1 cup shredded cheddar cheese

1/2 cup cooked and crumbled breakfast sausage (or diced cooked bacon)

1/2 cup diced bell peppers (mix of colors)

1/4 cup diced red onion

1/2 avocado, sliced

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

1 tablespoon olive oil

Salsa, for serving

Hot sauce, for serving (optional)

Instructions
 

Preheat the Pan: Heat a large skillet over medium heat and add the olive oil. Once hot, add the diced bell peppers and red onion. Sauté for about 3-4 minutes, until they begin to soften.

    Mix the Eggs: In a mixing bowl, whisk together the eggs, whole milk, salt, and pepper until well combined. Pour the egg mixture into the skillet with the sautéed vegetables.

      Scramble the Eggs: Using a spatula, gently stir the eggs, cooking until just set but still slightly creamy. Fold in the cooked sausage (or bacon) and shredded cheddar cheese, allowing the cheese to melt into the mixture. Remove from heat.

        Assemble the Burritos: Lay out one tortilla on a flat surface. Spoon an equal amount of the egg mixture onto the center of the tortilla. Top with slices of avocado and a sprinkle of fresh cilantro.

          Roll It Up: Fold in the sides of the tortilla, then roll it away from you to enclose the filling completely. Repeat the process for the remaining tortillas.

            Toast the Burritos (Optional): Wipe out the skillet and return it to medium heat. Place the burritos seam-side down in the skillet and toast each side for about 2 minutes, until golden and slightly crispy.
