For the crust:

1 ¾ cups all-purpose flour

½ cup granulated sugar

½ teaspoon salt

¾ cup unsalted butter, melted (plus more for greasing the pan)

1 teaspoon vanilla extract

For the blueberry filling:

2 cups fresh or frozen blueberries (thawed)

⅓ cup granulated sugar

2 tablespoons cornstarch

1 tablespoon lemon juice

½ teaspoon lemon zest

¼ teaspoon cinnamon

For the crumb topping:

¾ cup rolled oats

¾ cup all-purpose flour

½ cup brown sugar, packed

½ teaspoon cinnamon

¼ teaspoon salt

½ cup unsalted butter, melted

Instructions
 

Preheat Oven:

    Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan with butter or line it with parchment paper for easy removal.

      Make the Crust:

        In a medium bowl, whisk together the flour, sugar, and salt. Stir in the melted butter and vanilla extract until combined. Press this mixture evenly into the bottom of the prepared baking pan to form the crust. Bake for 15 minutes until lightly golden.

          Prepare the Filling:

            In another bowl, combine the blueberries, sugar, cornstarch, lemon juice, lemon zest, and cinnamon. Gently toss until the blueberries are coated. Pour the blueberry mixture over the pre-baked crust, spreading it evenly.

              Make the Crumb Topping:

                In a separate bowl, mix together the rolled oats, flour, brown sugar, cinnamon, and salt. Stir in the melted butter until the mixture resembles coarse crumbs. Sprinkle this crumb topping evenly over the blueberries.

                  Bake the Bars:

                    Return the pan to the oven and bake for an additional 25-30 minutes, or until the topping is golden brown and the blueberry filling is bubbling.

                      Cool and Slice:

                        Remove the pie bars from the oven and let them cool in the pan on a wire rack for at least 30 minutes. Once cooled, lift them out using the parchment paper, slice into bars, and serve.
