Blueberry Oatmeal Muffins

1 cup rolled oats

1 cup milk (or dairy-free alternative)

1 cup whole wheat flour

1/2 cup brown sugar (packed)

1/4 cup honey or maple syrup

1/4 cup vegetable oil or melted coconut oil

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup fresh or frozen blueberries (if using frozen, do not thaw)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with muffin liners or lightly grease it with cooking spray.

    Combine Oats and Milk: In a medium bowl, mix the rolled oats and milk together. Let this mixture sit for about 10 minutes to allow the oats to soften and absorb some liquid.

      Mix Dry Ingredients: In a large bowl, whisk together the whole wheat flour, brown sugar, baking powder, baking soda, and salt.

        Combine Wet Ingredients: In another bowl, beat the egg, then add the honey (or maple syrup), vegetable oil (or coconut oil), and vanilla extract. Mix until well combined.

          Blend Wet and Dry Mixtures: Add the wet mixture to the dry ingredients, then stir until just combined. Do not overmix! Gently fold in the soaked oats and blueberries until they are evenly distributed throughout the batter.

            Fill Muffin Tins: Spoon the batter into the prepared muffin cups, filling each about 3/4 full. This will allow room for the muffins to rise.

              Bake: Place the muffin tin in the preheated oven and bake for about 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

                Cool: Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes. Then, transfer them to a wire rack to cool completely.
