BLT Pasta Salad with Ranch

Ingredients
  

8 oz rotini pasta

4 strips of bacon, cooked crispy and crumbled

1 cup cherry tomatoes, halved

1 cup fresh spinach, roughly chopped

1/2 cup diced cucumbers

1/2 cup shredded cheddar cheese

1/4 cup green onions, sliced

1/2 cup ranch dressing

Salt and pepper to taste

Optional: 1/4 tsp smoked paprika for an extra kick

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Bacon: While the pasta is cooking, fry the bacon in a skillet over medium heat until crispy. Remove from the skillet, let it drain on paper towels, and crumble it once cooled.

      Combine the Salad Ingredients: In a large mixing bowl, combine the cooked pasta, crumbled bacon, cherry tomatoes, spinach, cucumber, cheddar cheese, and green onions.

        Add Dressing: Pour in the ranch dressing and gently toss all the ingredients together until everything is evenly coated. If desired, sprinkle in the smoked paprika for a bit of heat. Adjust salt and pepper to taste.

          Chill and Serve: Cover the pasta salad and refrigerate for at least 30 minutes to allow the flavors to meld together. Serve chilled or at room temperature.
