BLT Cauliflower Salad

1 medium head of cauliflower, cut into small florets

6 strips of thick-cut bacon, cooked until crispy and crumbled

1 cup cherry tomatoes, halved

1/2 cup fresh parsley, finely chopped

1/4 cup green onions, chopped

1/2 cup shredded cheddar cheese (optional)

1/2 cup mayonnaise

2 tablespoons apple cider vinegar

1 teaspoon Dijon mustard

1 teaspoon garlic powder

Salt and pepper to taste

Prepare the Cauliflower: In a large pot, bring salted water to a boil. Add the cauliflower florets and blanch for about 3-4 minutes, or until they are tender-crisp. Drain and immediately transfer them to a bowl of ice water to stop the cooking process. Once cooled, drain again and pat dry with paper towels.

    Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and place on a paper towel to absorb excess grease. Once cooled, crumble the bacon into pieces.

      Mix the Dressing: In a medium bowl, combine the mayonnaise, apple cider vinegar, Dijon mustard, garlic powder, and a pinch of salt and pepper. Whisk until smooth and creamy.
