1 lb (450g) boneless, skinless chicken thighs (or breasts)

1/4 cup soy sauce (low-sodium recommended)

1/4 cup honey or maple syrup

2 tbsp rice vinegar

2 tbsp sesame oil

2 cloves garlic, minced

1-inch piece fresh ginger, grated or minced

1 tsp cornstarch (optional, for thicker sauce)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Prep the Chicken: Start by trimming any excess fat from the chicken thighs. Cut them into bite-sized pieces for even cooking.

    Make the Marinade: In a bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. If you prefer a thicker sauce, mix in the cornstarch and whisk until combined.

      Marinate the Chicken: Place the chicken pieces into a resealable plastic bag or a shallow dish. Pour the teriyaki marinade over the chicken, ensuring all pieces are well-coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes (up to 4 hours for deeper flavor).

        Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.
