Beef Lettuce Wraps with Blueberry Glaze

1 lb ground beef

1 cup fresh blueberries

2 tbsp soy sauce

1 tbsp honey

1 tsp fresh ginger, grated

2 cloves garlic, minced

1 tbsp sesame oil

1 tbsp rice vinegar

1 tsp cornstarch (optional, for thickening)

Salt and pepper, to taste

1 head of butter lettuce (or iceberg), separate leaves

1/2 cup chopped green onions

1/4 cup chopped cilantro (optional)

1 tbsp sesame seeds, for garnish

Instructions
 

Prepare the Blueberry Glaze: In a small saucepan, combine the fresh blueberries, soy sauce, honey, ginger, garlic, sesame oil, and rice vinegar. Stir over medium heat until the blueberries begin to break down and the mixture starts to bubble. Simmer for about 5-7 minutes. If you’d like a thicker glaze, mix cornstarch with a tablespoon of water to create a slurry, then stir it into the sauce and let it cook for another minute until thickened. Remove from heat and set aside.

    Cook the Beef: In a large skillet over medium-high heat, add the ground beef. Season with salt and pepper and cook until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

      Combine the Beef and Glaze: Pour half of the blueberry glaze into the cooked beef and stir well to combine. Reserve the remaining glaze for drizzling when serving.

        Assemble the Wraps: Take a leaf of butter lettuce and spoon about 1/4 cup of the beef mixture into the center of the leaf. Top with chopped green onions and cilantro, if using.

          Serve: Drizzle the remaining blueberry glaze over the filled lettuce wraps and sprinkle with sesame seeds. Serve immediately, allowing guests to fold the wraps and enjoy them fresh!
