1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

For the Polenta Cakes:

1 cup polenta (cornmeal)

4 cups chicken or vegetable broth

1/2 cup grated Parmesan cheese

1/4 cup heavy cream

2 tablespoons unsalted butter

Salt and pepper to taste

1 tablespoon olive oil (for frying)

For Garnish:

Fresh parsley, chopped

Extra BBQ sauce

Sliced green onions (optional)

Instructions

Prepare the Pulled Chicken:

    - In a large mixing bowl, combine the shredded chicken, BBQ sauce, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well until the chicken is evenly coated with the sauce.

      - Set aside to marinate for at least 30 minutes while you prepare the polenta.

        Cook the Polenta:

          - In a medium saucepan, bring the chicken or vegetable broth to a boil over medium-high heat.

            - Gradually whisk in the polenta, reducing heat to low. Continue whisking until the mixture thickens and begins to pull away from the sides of the saucepan, about 10-15 minutes.

              - Stir in the Parmesan cheese, heavy cream, butter, salt, and pepper. Mix until well incorporated and creamy.

                Shape the Polenta Cakes:

                  - Spread the cooked polenta in a greased 9x13 inch baking dish, smoothing the top with a spatula. Allow it to cool at room temperature for about 20 minutes, and then refrigerate for at least another 30 minutes to firm up.

                    - Once set, cut the polenta into desired shapes (round or square) for cakes.

                      Cook the Polenta Cakes:

                        - Heat olive oil in a large skillet over medium heat.

                          - Fry the polenta cakes in batches for about 4-5 minutes on each side until they are golden brown and crispy. Add more oil as necessary and keep the cakes warm in a low oven while you fry the rest.

                            Assemble the Dish:

                              - Serve the crispy polenta cakes topped with generous portions of BBQ pulled chicken. Drizzle with extra BBQ sauce and garnish with chopped parsley and sliced green onions if desired.

                                Enjoy!

                                  - These BBQ Pulled Chicken Polenta Cakes are perfect for a hearty dinner or a fun gathering with friends.
