Ingredients

2 cups rotini pasta

1 tablespoon olive oil

1 pound chicken breast, cut into bite-sized pieces

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper, to taste

1 cup BBQ sauce (your favorite brand)

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh or frozen)

1 red bell pepper, diced

1 cup shredded mozzarella cheese

¼ cup green onions, sliced (for garnish)

Fresh cilantro (optional, for garnish)

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the rotini pasta according to package instructions until al dente. Drain and set aside.

Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces, smoked paprika, garlic powder, onion powder, salt, and pepper. Sauté the chicken for about 6-8 minutes, or until cooked through and golden brown.

Combine Ingredients: Once the chicken is cooked, stir in the BBQ sauce, cherry tomatoes, corn, and diced red bell pepper. Cook for an additional 2-3 minutes until the vegetables are slightly softened.

Mix in Pasta: Add the drained rotini pasta to the skillet and toss everything together until well combined. Ensure the pasta is evenly coated with the BBQ sauce.

Add Cheese: Sprinkle the shredded mozzarella cheese on top of the pasta mixture. Cover the skillet and allow it to cook for another 2-3 minutes on low heat, or until the cheese is melted and bubbly.

Garnish and Serve: Remove the skillet from heat. Garnish with sliced green onions and fresh cilantro, if desired. Serve hot and enjoy your delicious BBQ Chicken Pasta Skillet!
