1 cup cherry tomatoes, halved

1 cup corn (canned or grilled)

1 red bell pepper, diced

1 avocado, diced

1/2 cup red onion, finely chopped

1/2 cup shredded cheddar cheese

1/4 cup cilantro, chopped

1/4 cup ranch dressing

Salt and pepper to taste

Tortilla chips, crushed (for garnish)

Instructions

Prepare the BBQ Chicken: In a medium bowl, combine the shredded rotisserie chicken with the BBQ sauce, mixing well until the chicken is fully coated. Set aside to allow the flavors to meld.

Chop the Vegetables: In a large salad bowl, combine the mixed lettuce, cherry tomatoes, corn, red bell pepper, avocado, and red onion. Toss gently to mix the ingredients.

Add the Chicken: Once the veggies are well mixed, add the BBQ chicken on top of the salad mix. Sprinkle the shredded cheddar cheese and chopped cilantro over the chicken.

Dress the Salad: Drizzle the ranch dressing over the entire salad. Season with salt and pepper to taste.

Garnish and Serve: Just before serving, sprinkle crushed tortilla chips over the top for added crunch. Toss gently if desired or serve immediately in individual bowls.
