1 pound smoked brisket, thinly sliced

1 cup barbecue sauce (homemade or store-bought)

4 large sandwich rolls (ciabatta or hoagie rolls work best)

1 cup shredded sharp cheddar cheese

1/2 cup caramelized onions (about 1 large onion)

1/4 cup pickled jalapeños (optional, for a spicy kick)

1 tablespoon unsalted butter

Fresh cilantro or parsley, for garnish (optional)

Salt and pepper to taste

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Mix Brisket and Sauce: In a large bowl, combine the thinly sliced smoked brisket with the barbecue sauce. Mix well until the brisket is fully coated. Taste for seasoning and adjust with salt and pepper as needed.

      Prepare Sandwich Rolls: Slice the sandwich rolls in half lengthwise. If you prefer a crunchier texture, lightly toast the insides of the rolls in a skillet or under the broiler until golden brown.

        Layer Ingredients: On the bottom half of each roll, layer a portion of the BBQ brisket mixture. Top with caramelized onions, shredded cheddar cheese, and pickled jalapeños if using.

          Add the Top: Place the top half of the roll on the loaded bottom half.

            Butter and Bake: Spread unsalted butter on the outside of each sandwich. Place the melts on a baking sheet and bake in the oven for about 10-15 minutes, or until the cheese is melted and bubbly, and the bread is crispy and golden.

              Serve: Remove from the oven and let cool for a minute. Cut each melt in half, garnish with fresh cilantro or parsley if desired, and serve immediately with extra BBQ sauce on the side for dipping.
