Basil Peach Chicken Pitas

Ingredients
  

2 boneless, skinless chicken breasts

2 ripe peaches, sliced (preferably freestone)

2 tablespoons fresh basil, chopped (plus extra for garnish)

1 tablespoon balsamic vinegar

1 tablespoon olive oil

1 teaspoon honey

Salt and pepper to taste

4 whole grain or pita bread

1 cup arugula or spinach

½ cup feta cheese, crumbled (optional)

¼ cup plain Greek yogurt (for drizzling)

Instructions
 

Prepare the Chicken:

    - Season the chicken breasts with olive oil, salt, and pepper. Heat a grill pan or outdoor grill over medium-high heat.

      - Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat, let it rest for a few minutes, and then slice it into thin strips.

        Make the Peach Mixture:

          - In a bowl, combine the sliced peaches, chopped basil, balsamic vinegar, honey, and a pinch of salt and pepper. Gently toss to coat and let it sit for about 10 minutes to marinate.

            Assemble the Pitas:

              - Warm the pita bread in the grill or a dry skillet for about 1-2 minutes on each side until soft and pliable.

                Layer the Filling:

                  - Start by placing a handful of arugula or spinach on each pita.

                    - Add a portion of the grilled chicken slices and then spoon the marinated peach mixture over the top.

                      Finish with Cheese and Yogurt:

                        - Sprinkle a bit of crumbled feta cheese over the peach and chicken, if using. Drizzle a little Greek yogurt on top for creaminess.
