Ingredients

For the filling:

4 ripe bananas, sliced

1 tablespoon lemon juice

1/4 cup brown sugar

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1 tablespoon cornstarch

For the crumble topping:

1 cup rolled oats

1/2 cup all-purpose flour

1/2 cup packed brown sugar

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/3 cup unsalted butter, melted

1/2 cup chopped walnuts or pecans (optional)

Instructions

Preheat your oven: Preheat your oven to 350°F (175°C).

Prepare the banana filling: In a large bowl, combine the sliced bananas, lemon juice, brown sugar, vanilla extract, ground cinnamon, and cornstarch. Toss gently to coat the bananas evenly. Pour the mixture into a greased 9x9-inch baking dish and spread it evenly.

Make the crumble topping: In a separate bowl, mix together the rolled oats, all-purpose flour, brown sugar, salt, and ground cinnamon. Drizzle the melted butter over the mixture and stir using a fork or your fingers until the mixture resembles coarse crumbs. Stir in the chopped nuts if using.

Assemble the dish: Evenly sprinkle the crumble topping over the banana filling in the baking dish.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the topping is golden brown and the banana filling is bubbling.

Cool and serve: Once done, remove the banana crumble from the oven and let it cool slightly before serving. It can be enjoyed warm or at room temperature, perfect on its own or with a scoop of vanilla ice cream!
