1 cup blueberries (fresh or frozen, thawed if frozen)

1 cup rolled oats

1/2 cup almond flour (or all-purpose flour)

1/4 cup coconut sugar (or brown sugar)

1/2 teaspoon vanilla extract

1/4 teaspoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/4 cup chopped walnuts or pecans (optional)

2 tablespoons maple syrup (optional, for extra sweetness)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the mashed bananas and vanilla extract. Mix until creamy and smooth.

      Stir in the rolled oats, almond flour, coconut sugar, baking powder, baking soda, cinnamon, and salt. Mix until well combined, creating a thick dough.

        Gently fold in the blueberries and nuts (if using), making sure they are evenly distributed without breaking the berries.

          For extra sweetness and moisture, drizzle the maple syrup over the mixture, and fold gently to incorporate.

            Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
