2 medium zucchinis

1 cup grated Parmesan cheese

1 cup seasoned breadcrumbs (or panko)

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon dried oregano

½ teaspoon black pepper

½ teaspoon salt

Cooking spray (or olive oil for drizzling)

Fresh parsley (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Zucchini: Wash the zucchinis and cut them into fry-like shapes — about 1/4 inch thick. Place them on a clean kitchen towel or paper towel and sprinkle lightly with salt. Allow them to sit for about 10 minutes to draw out excess moisture, then pat them dry.

      Set Up Breading Station: In one bowl, beat the two large eggs. In another bowl, combine the grated Parmesan cheese, seasoned breadcrumbs, garlic powder, onion powder, oregano, black pepper, and salt.

        Coat the Zucchini: Dip each zucchini slice into the beaten eggs, allowing any excess to drip off. Then, coat the zucchini well with the breadcrumb mixture, pressing gently to ensure the crumbs adhere.

          Arrange on Baking Sheet: Place the breaded zucchini fries on the prepared baking sheet in a single layer, ensuring they do not touch each other. Lightly spray the tops with cooking spray or drizzle with olive oil to help them crisp up.

            Bake: Bake in the preheated oven for 20-25 minutes, flipping the fries halfway through, until they are golden brown and crispy.
