Baked Veggie Nuggets

1 cup cooked quinoa

1 cup finely chopped broccoli florets

1/2 cup grated carrots

1/2 cup mashed sweet potatoes (cooked and cooled)

1/2 cup canned chickpeas, rinsed and mashed

1/4 cup breadcrumbs (whole wheat or gluten-free)

1/4 cup grated parmesan cheese (or nutritional yeast for vegan)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

1/4 cup fresh parsley, finely chopped (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Veggies: In a large mixing bowl, combine the cooked quinoa, chopped broccoli, grated carrots, mashed sweet potatoes, and mashed chickpeas. Mix well until fully combined.

      Season and Bind: Add the breadcrumbs, parmesan cheese (or nutritional yeast), olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper to the veggie mixture. If you're using fresh parsley, add it in now as well. Mix everything until you have a thick and sticky mixture.

        Form the Nuggets: With your hands, take a small amount of the mixture and shape it into a nugget or patty shape, about the size of a golf ball and then flatten slightly. Place each nugget on the prepared baking sheet, leaving space between each one.

          Bake the Nuggets: Once all the nuggets are formed and on the baking sheet, place them in the preheated oven and bake for 20-25 minutes, flipping halfway through. You want them to be golden brown and slightly crispy on the outside.

            Serve: Once baked, remove the nuggets from the oven and let them cool for a few minutes. They pair wonderfully with dipping sauces like ketchup, hummus, or a tangy yogurt sauce.
