Ingredients

2 cups old-fashioned rolled oats

1 teaspoon baking powder

1 teaspoon cinnamon

1/2 teaspoon salt

2 ripe bananas, mashed

2 large eggs

1 cup milk (dairy or non-dairy)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 cup mixed berries (fresh or frozen)

1/4 cup chopped nuts (walnuts, pecans, or almonds)

Optional toppings: additional berries, sliced banana, or yogurt

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray with non-stick cooking spray.

Mix Dry Ingredients: In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt. Stir until well mixed.

Prepare Wet Ingredients: In another medium bowl, whisk together the mashed bananas, eggs, milk, honey (or maple syrup), and vanilla extract until smooth and well combined.

Combine: Pour the wet mixture into the bowl with the dry ingredients. Gently fold in the mixed berries and chopped nuts, ensuring everything is evenly distributed.

Fill Muffin Tin: Divide the oatmeal mixture evenly among the muffin cups, filling each about 3/4 full.

Bake: Bake in the preheated oven for 20-25 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.

Cool: Let the oatmeal cups cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

Serve: Enjoy warm or allow them to cool completely before storing. These oatmeal cups can be enjoyed as quick breakfasts, snacks, or even a sweet treat throughout the week!
