Baked Ham and Cheese Croissants

4 large croissants (preferably day-old for better structure)

1 cup diced cooked ham (smoked or honey baked)

1 cup shredded Swiss cheese (or your favorite melting cheese)

1/2 cup Dijon mustard

1/4 cup mayonnaise

1 tablespoon honey

1 teaspoon garlic powder

1 teaspoon dried thyme (or fresh if available)

Freshly cracked black pepper to taste

1 egg (for egg wash)

Sesame seeds (for garnish, optional)

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Prepare the Filling: In a mixing bowl, combine the diced ham, shredded Swiss cheese, Dijon mustard, mayonnaise, honey, garlic powder, dried thyme, and black pepper. Mix well until all ingredients are evenly incorporated.

      Assemble the Croissants: Carefully slice each croissant in half horizontally without cutting all the way through, creating a pocket. Spoon a generous amount of the filling into each croissant, making sure to distribute it evenly.
