Baked Falafel Zucchini Sliders

1 cup cooked chickpeas (canned or soaked and cooked)

1 medium zucchini, grated and squeezed dry

1/2 cup breadcrumbs (whole wheat or gluten-free)

1/4 cup finely chopped fresh parsley

2 tablespoons tahini

1 tablespoon lemon juice

2 cloves garlic, minced

1/2 teaspoon cumin

1/2 teaspoon coriander

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for heat)

Olive oil spray (for baking)

Slider buns or small whole wheat pita breads

Optional toppings: sliced cucumbers, tomato, avocado, pickled red onions, tahini sauce, or yogurt sauce

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare Chickpeas: If using canned chickpeas, drain and rinse them thoroughly. If using dry chickpeas, soak them overnight and then cook them until tender.

      Make the Falafel Mixture: In a large mixing bowl, mash the chickpeas with a fork or potato masher until mostly smooth with some chunks remaining.

        Add Remaining Ingredients: To the mashed chickpeas, add the grated zucchini, breadcrumbs, parsley, tahini, lemon juice, minced garlic, cumin, coriander, salt, black pepper, and cayenne pepper (if using). Mix well until all ingredients are combined.

          Form Patties: With your hands, shape the mixture into small patties (about 2 to 3 inches in diameter). Place each patty on the prepared baking sheet, leaving some space between them.

            Bake the Falafel Sliders: Lightly spray the tops of the patties with olive oil to help them crisp up. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until they're golden brown and firm to touch.
