Baked Cabbage Nest Burgers

1 medium green or savoy cabbage

1 lb ground beef (or ground turkey for a lighter option)

1/2 cup cooked quinoa or rice

1 small onion, finely chopped

2 cloves garlic, minced

1 medium carrot, grated

1/4 cup fresh parsley, chopped

1 tbsp Worcestershire sauce

1 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp cayenne pepper (optional, for heat)

1/2 cup shredded cheese (cheddar or mozzarella)

1/4 cup mayonnaise (for serving)

1 tbsp mustard (for serving)

Sliced tomatoes, pickles, or avocado (for topping)

Instructions
 

Prepare the Cabbage: Preheat your oven to 375°F (190°C). Carefully remove the core from the cabbage and peel away 8-10 outer leaves. Place the leaves in a pot of boiling water for 2-3 minutes until tender. Remove and let them cool, then pat dry with a towel.

    Make the Burger Mixture: In a large bowl, combine the ground beef (or turkey), cooked quinoa or rice, chopped onion, minced garlic, grated carrot, chopped parsley, Worcestershire sauce, smoked paprika, salt, black pepper, and cayenne pepper, if using. Mix until just combined.

      Form the Patties: Divide the meat mixture into 4-6 equal portions and shape them into burger patties, about 1-inch thick.

        Construct the Cabbage Nests: Take one cabbage leaf and place a burger patty in the center. Fold the sides of the leaf over the patty to create a nest. Repeat this with the remaining patties and cabbage leaves.

          Bake the Nests: Place the cabbage nests in a large baking dish or on a lined baking sheet. Bake in the preheated oven for 25-30 minutes, or until the patties are cooked through and register at least 160°F (70°C) internal temperature.

            Add Cheese (Optional): In the last 5 minutes of baking, sprinkle cheese on top of the patties and return to the oven until melted.

              Serve: Remove from the oven and let cool slightly. Serve the baked cabbage nest burgers with a dollop of mayonnaise, a swipe of mustard, and your choice of sliced toppings like tomatoes, pickles, or avocado.
