Ingredients

2 ripe bananas, mashed

1 cup rolled oats

1/2 cup milk (dairy or non-dairy)

1/4 cup maple syrup or honey

1/2 teaspoon vanilla extract

1/2 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/3 cup chopped walnuts (plus extra for topping)

Optional: 1/4 cup chocolate chips or dried fruit for added flavor

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and lightly greasing a muffin tin or lining it with muffin liners.

Combine Wet Ingredients: In a mixing bowl, mash the ripe bananas until smooth. Stir in the milk, maple syrup (or honey), and vanilla extract until well combined.

Mix Dry Ingredients: In another bowl, combine the rolled oats, baking powder, cinnamon, and salt. Mix them together until evenly distributed.

Combine Mixtures: Gradually fold the dry mixture into the wet mixture. Stir gently until just combined. Avoid overmixing to keep the cups tender.

Add Nuts: Fold in the chopped walnuts, along with any optional additions like chocolate chips or dried fruits, ensuring they're evenly scattered throughout the batter.

Fill the Muffin Tin: Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full. For extra crunch, sprinkle a few additional walnut pieces on top of each cup.

Bake: Place the muffin tin in the oven and bake for about 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Once baked, remove the cups from the oven and let them cool in the tin for 5-10 minutes. Gently transfer the baked oat cups to a wire rack to cool completely before serving.

Enjoy: Serve them warm or at room temperature as a nutritious breakfast, snack, or dessert. They can be stored in an airtight container in the refrigerator for up to a week!
